Honey Glazed Carrot Fries with Whipped Feta

Honey Glazed Carrot Fries with Whipped Feta

Yield: 2-3
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients

For the Carrot Fries:

  • 1 lb carrots, peeled and cut into fry-sized sticks
  • 2-3 tbsps olive oil
  • 1-2 tbsps honey
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp cornstarch or potato starch (for extra crispiness)

For the Whipped Feta:

  • 1/2 cup crumbled feta
  • 1/3 cup greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsps olive oil
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 2 tbsps (optional for desired consistency)

Instructions

    1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
    2. In a large bowl, toss the carrot sticks with olive oil, cornstarch/potato starch, smoked paprika, garlic powder, salt, and pepper. Spread them evenly on the baking sheet.
    3. Bake for 20-25 minutes, flipping halfway through, until the carrots are golden and slightly crisp.
    4. Drizzle the honey over the carrots in the last 5 minutes of baking. Toss gently and return to the oven for the final few minutes.
    5. To a blender or food processor, add feta, yogurt, lemon juice, olive oil, salt and pepper. Blend until smooth, add 1 tbsp of water at a time if needed to blend. Scoop into serving bowl for dipping fries OR spread out on plate if you’d like the fries on top. 
    6. Plate the carrot fries and enjoy!
