Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1 tablespoon kosher salt (for boiling)
  • 2–3 tablespoons unsalted butter
  • ½ cup sour cream (plus more to taste)
  • ⅓–½ cup warm milk or heavy cream
  • 1–1½ cups shredded cheddar cheese
  • 6 strips bacon, cooked and chopped + 1 strip for garnish
  • 3 green onions, sliced + 1 for garnish
  • Salt & black pepper, to taste

Instructions

  • Place the potatoes in a large pot and cover with cold water. Season with salt and bring to a boil. Cook until the potatoes are fork-tender, then drain well.
  • Return the potatoes to the warm pot. Add butter, warm milk, and sour cream. Mash until creamy and smooth.
  • Stir in the cheddar (melted in or just folded in), along with the chopped bacon and green onions. Season to taste with salt and black pepper. Spoon into a serving bowl.
  • Top with a small dollop of sour cream, the extra bacon, and the extra green onion. Enjoy!
