Giada’s One Pan Italian Shrimp and Rice

This dish has all of the flavors similar to frutti di mar and then some! I love how filling it is and the presentation is just lovely. I almost always have arborio rice in the pantry and shrimp in the freezer so it is such an easy decision to whip this together. Also, it’s one pan! Minimal cleanup please!!

Giada's One Pan Italian Shrimp and Rice

Ingredients

  • 1 cup arborio rice
  • 1 1/2 cup vegetable broth
  • 1/2 cup water
  • 1 can peeled cherry tomatoes
  • 2-3 tbsp EVOO
  • 1 1/2 tsps salt
  • 2 shallots, chopped
  • 2 cups spinach, packed and roughly chopped
  • 1/3 cup chopped basil, to serve
  • 1lb shrimp (peeled and deveined)
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes

Notes

  1. Heat a large pan over medium heat then add in olive oil and shallot. Sauté for about one minute or until fragrant.
  2. Add in cherry tomatoes and 1/2 tsp salt. Use the back of a wooden spoon to carefully smash the tomatoes. The juices will begin to thicken as they cook, ~3 minutes.
  3. Stir in rice to coat in tomatoes. Slightly toast the rice for 3-4 minutes.
  4. Add in vegetable broth, water and 1/2 tsp salt. Bring to a boil, reduce to a simmer and cover. Cook for 10 minutes until rice is al dente and some liquid is remaining.
  5. In a small bowl, toss shrimp in oregano, remaining salt and red pepper flakes. Nestle shrimp into rice and sprinkle spinach on top.
  6. Cover and cook until shrimp are opaque, 7-10 minutes. Serve with fresh basil and enjoy!
