Somewhere between tzatziki and cilbir, but not really, this has quickly become a part of my breakfast rotation! I have made it with poached, fried, and scrambled eggs and it is so delightful every way.
Ingredients
- 1 mini cucumber, grated and liquid squeezed out
- 1 cup full fat greek yogurt
- 1 tbsp chopped chives
- 1 tbsp chopped dill
- juice of 1/2 lemon
- 2 eggs, prepared to your preference (I poached mine)
- Salt and pepper
- Sourdough or bread of choice for serving
Instructions
- In a small bowl, combined yogurt, herbs, cucumber, lemon juice, salt and pepper. Spread mixture on plate or bowl.
- Prepare your eggs and bread to your liking. I recommend panfrying the sourdough in olive oil until golden on each side.
- Place eggs on top of yogurt. Drizzle with olive oil, garnish with additional herbs, serve with toast and enjoy!
