Cucumber Yogurt Breakfast Bowl

Somewhere between tzatziki and cilbir, but not really, this has quickly become a part of my breakfast rotation! I have made it with poached, fried, and scrambled eggs and it is so delightful every way.

Cucumber Yogurt Breakfast Bowl

Somewhere between tzatziki and cilbir, but not really, this has quickly become a part of my breakfast rotation! I have made it with poached, fried, and scrambled eggs and it is so delightful every way. 

Ingredients

  • 1 mini cucumber, grated and liquid squeezed out
  • 1 cup full fat greek yogurt
  • 1 tbsp chopped chives
  • 1 tbsp chopped dill
  • juice of 1/2 lemon
  • 2 eggs, prepared to your preference (I poached mine)
  • Salt and pepper
  • Sourdough or bread of choice for serving

Instructions

  1. In a small bowl, combined yogurt, herbs, cucumber, lemon juice, salt and pepper. Spread mixture on plate or bowl.
  2. Prepare your eggs and bread to your liking. I recommend panfrying the sourdough in olive oil until golden on each side.
  3. Place eggs on top of yogurt. Drizzle with olive oil, garnish with additional herbs, serve with toast and enjoy!
