With warm cinnamon, tender apples, and a sweet glaze, this loaf cake is perfect for enjoying with a cup of coffee or sharing with friends. Ingredients
- Cake
- 3 small apples, peeled and rough chopped
- 1/3 cup brown sugar, packed
- 3 tsps cinnamon
- 2/3 cup + 3 tbsp granulated sugar
- 1/2 cup unsalted butter, softened
- 2 eggs, room temp
- 1 1/2 tsps vanilla
- 1 1/2 cups AP flour
- 13/4 tsps baking powder
- 1 tsp salt
- 1/2 cup milk
- Icing
- 1 cup powdered sugar
- 2-3 tbsps milk
Instructions
- Preheat oven to 350°F. Line a 9x5 loaf pan with parchment paper (I like to lightly grease the pan first so the parchment paper holds in snug).
- Mix brown sugar and 2 tsps cinnamon in a small bowl, set aside. In another bowl, toss apples with 3 tbsps granulated sugar and remaining 1 tsp of cinnamon, set aside.
- Using a hand mixer, beat together butter and remaining sugar until fluffy, ~2 minutes. Add eggs and vanilla, mix until just combined.
- In a separate bowl, lightly whisk together flour, baking powder and salt. Gently fold flour mixture into butter mixture until no flour pockets are left. Add 1/2 cup milk into batter until smooth.
- Pour half the batter into the prepared loaf pan, then half of the apples. Sprinkle half of the brown sugar/cinnamon mixture, then repeat layers.
- Use a knife, swirl the apple mixture into the batter ensuring the apples on top are snug into the batter.
- Bake for about 1 hour, until cooked through and toothpick comes out clean when inserted. Allow loaf to cool on a wire rack for 10 minutes.
- Meanwhile, mixed together icing and drizzle on top. Enjoy!
