Cookie Dough Cinnamon Buns

It was only a matter of time for the dough boss (Ross) to make something this dreamy???? Definitely meets your sweet cravings! It was a a combination of our 2 favorite treats and I couldn’t get enough! We placed half of the buns in a baking dish and a few in ramekins which had a beautiful result and highly recommend!

Cookie Dough Cinnamon Buns

Ingredients

Dough

  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 5 cups flour, divided
  • 2 cups warm whole milk, 110-115°F
  • 1 pack active dry yeast
  • 2 tsps salt
  • 1 tsp baking powder

Filling

  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 2 tbsps ground cinnamon
  • Your favorite cookie dough (enough for 12 cookies), room temp

Icing

  • 4oz cream cheese, room temperature
  • 1 cup powdered sugar
  • 2 tbsps unsalted butter, melted
  • 2 tbsps heavy cream
  • 1 tsp vanilla extract
  • 1/8 cup mini chocolate chips

Instructions

  1. Start by greasing (2) 9x13 baking dishes (we put a few buns in ramekins as well, highly recommend!) In a large bowl, whisk together milk, melted butter and sugar. Sprinkle yeast on top, mix and allow to sit until frothy. Add 4 cups of flour and use a wooden spoon to mix into milk mixture until combined. Cover bowl with clean dish towel and allow to rise for 1 hour.
  2. Once dough is doubled in size, add salt, baking powder, and ~3/4 cup to dough and mix. Flour a clean surface, pour dough onto surface. Knead dough lightly while adding flour as needed. Once dough is no longer sticky, roll out dough into large rectangle that is about a 1/2 inch thick.
  3. In a small bowl, mix together softened butter, brown sugar, and cinnamon. Spread across surface of dough. Scoop/dollop small amounts of cookie dough across surface. Flatten cookie dough by hand or layer parchment paper over to roll with a rolling pin then remove parchment.
  4. Carefully start to roll dough over itself to create cinnamon bun form. Use a sharp knife to cut 14-16 cinnamon buns, as shown, (cut in half and repeat to get even slices). Place cinnamon buns snug in prepared baking dishes/ramekins. Cover with plastic wrap or clean dish towel and allow to sit for 30 minutes.
  5. Preheat oven to 350°F. Remove dish towel and bake for 25-30 minutes or until golden. Using a hand mixer, combined cream cheese, vanilla, powdered sugar, and heavy cream until smooth. Use a spoon to mix in chocolate chips.
  6. Remove cinnamon buns from oven. Scoop icing on top and spread out evenly. Enjoy!
