Fluffy Focaccia

Baking season is here so that means fresh focaccia on deck always! This high hydration dough results in the fluffiest interior and golden exterior. I have made both breakfast and lunch sandwiches with it, served with dinner and paired with salads. so delicious!

Prep Time: 5 minutes
Cook Time: 30 minutes
Additional Time: 2 hours 30 minutes
Total Time: 3 hours 5 minutes

Baking season is here so that means fresh focaccia on deck always! This high hydration dough results in the fluffiest interior and golden exterior.

Ingredients

  • 1 3/4 tsps instant yeast
  • 540 grams bread flour (4 1/2 cups)
  • 2 cups warm water
  • 2 tsps kosher salt
  • 2 tbsps olive oil for dough + more to coat pan and loaf

Instructions

  1. Pour water into a bowl and mix in yeast until dissolved. Mix in salt then add olive oil and flour. Use rubber spatula to mix dough together until no more flour pockets are seen, it is going to be very wet. Cover with dish towel for 30 minutes.
  2. Dampen hands and do a stretch and fold (fold edges over center all around dough). Cover and repeat 3 times. After 4th stretch and fold, rest for 30 minutes covered.
  3. Preheat oven 425°F. Heavily coat large baking sheet with olive oil, or I used our deep dish pizza pan. Pour dough into prepared pan. Stretch dough to fit the pan. Cover and allow to rise for 20-30 minutes.
  4. Coat top of dough with olive oil and lightly coat your hands then start to dimple into the dough all over (as shown). Bake for 25-30 minutes or until golden brown (if using a deep dish pizza pan it will take 35-40 minutes). Allow to cool for 10 minutes before slicing in.
