Ingredients
- 3 large yellow onions, halved and sliced thin
- 4 tbsps unsalted butter
- 1 tsp sugar (optional)
- 2-3 cloves garlic, minced
- 1/2 cup dry white wine (or sherry)
- 4 cups beef stock
- 5 sprigs fresh thyme, plus extra to garnish
- 1 lb pasta
- 1/2 cup grated parmesan
- 1 cup gruyere cheese, shredded
- Salt and pepper
Instructions
- Preheat a large pot over medium heat and melt the butter. Add the sliced onions and sauté for 2-3 minutes. If desired, add the sugar to help with caramelization. Reduce the heat to medium-low to prevent burning, and continue to sauté the onions, stirring occasionally, until they are deeply caramelized, about 15-20 minutes. Season with salt and pepper, then add the minced garlic and cook for 1-2 minutes, until fragrant.
- Increase the heat to medium-high, and deglaze the pot by adding the wine. Allow the wine to reduce slightly. Add the fresh thyme sprigs to the onion mixture, then pour in the beef stock and stir in the pasta. Bring the mixture to a boil, stirring to prevent the pasta from sticking together. Once boiling, reduce the heat to a simmer, cover, and cook for 10-15 minutes, stirring occasionally, until the liquid is absorbed and the pasta is al dente.
- Remove the thyme sprigs, then stir in the Gruyere and Parmesan cheese until melted and well combined. Plate the pasta and garnish with additional Parmesan, cracked black pepper, and fresh thyme. Enjoy!
