The journey of perfecting new flavors of cinnamon buns continues! In light of Easter right around the corner, we wanted to do something simple yet colorful. Funfetti checks both of those boxes! We added a little heavy cream to the filling for a creamier outcome and cut larger sections for fuller buns. The result had such a cake-like consistency I instantly fell in love!


Funfetti Cinnamon Buns

The journey of perfecting new flavors of cinnamon buns continues! In light of Easter right around the corner, we wanted to do something simple yet colorful. Funfetti checks both of those boxes!
Ingredients
Dough
- 1/2 cup unsalted butter, melted
- 1/2 cup sugar
- 5 cups flour, divided
- 2 cups warm whole milk, 110-115°F
- 1 pack active dry yeast
- 2 tsps salt
- 1 tsp baking powder
- 1/8 cup sprinkles
Filling
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 2 tbsps ground cinnamon
- 1 tbsp heavy cream
- 1-2 tbsps sprinkles
Icing
- 4oz cream cheese, room temperature
- 1 cup powdered sugar
- 2 tbsps unsalted butter, melted
- 2 tbsps heavy cream
- 1 tsp vanilla extract
- 1/8 cup sprinkles
Instructions
- Start by greasing a 9x13 baking dish. In a large bowl, whisk together milk, melted butter and sugar. Sprinkle yeast on top, mix and allow to sit until frothy. Add 4 cups of flour and use a wooden spoon to mix into milk mixture until combined. Cover bowl with clean dish towel and allow to rise for 1 hour.
- Once dough is doubled in size, add salt, baking powder, sprinkles and ~3/4 cup flour to dough and mix. Flour a clean surface, pour dough onto surface. Knead dough lightly while adding flour as needed. Once dough is no longer sticky, roll out dough into large rectangle that is about a 1/2 inch thick.
- In a small bowl, mix together softened butter, brown sugar, heavy cream and cinnamon. Spread across surface of dough. Sprinkle the sprinkles all over the filling.
- Carefully start to roll dough over itself to create cinnamon bun form. Use a sharp knife to cut 8 cinnamon buns, as shown, (cut in half and repeat to get even slices) or if you prefer, you can cut shorter buns to get 14-16 total, you will need 2 baking dishes if so. Place, cinnamon buns snug in prepared baking dishes. Cover with plastic wrap or clean dish towel and allow to sit for 30 minutes.
- Preheat oven to 350°F. Remove dish towel and bake for 35-40 minutes for thicker buns and 25-30 minutes, or until golden. Prepare the icing by whisking together, or using a hand mixer, cream cheese, vanilla, powdered sugar, and heavy cream until smooth. Use a spoon to mix in sprinkles
- Remove cinnamon buns from oven. Scoop icing on top and spread out evenly. Add more sprinkles. Enjoy!
