Ingredients
- 1/2 lb pasta (I used fusilli corti bucati)
- 1 tbsp olive oil
- 1 head roasted garlic
- 2 1/2 tbsps unsalted butter, divided and softened
- 1/2 cup grated parmesan (plus more, always)
- 1/2 cup panko crumbs
- 2 tbsps chopped parsley
- Salt and pepper
Instructions
- Begin by cooking the pasta according to the package instructions until it reaches an al dente texture. Once cooked, strain the pasta and coat it with olive oil to prevent sticking.
- In a pan over medium heat, melt ½ tablespoon of butter and add the panko crumbs. Stir continuously until the crumbs become golden brown, which should happen quickly.
- In a small bowl, combine the remaining butter with roasted garlic, half of the grated parmesan, half of the parsley, salt, and pepper. Add this mixture to the pasta, stirring to ensure everything is evenly coated.
- Next, mix in half of the toasted panko crumbs along with the remaining parmesan. To finish, top the dish with the additional toasted panko, more parmesan, and the remaining parsley. Serve immediately and enjoy!
