Ingredients

  • 2 heads of garlic
  • 1 (8 oz) block cream cheese, softened
  • ½ shallot, minced
  • ½ cup sour cream
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 3 cloves garlic, minced
  • 2 tbsp melted butter
  • 1 to 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 green onions, sliced (for garnish)

Instructions

    1. Preheat the oven to 400°F. Slice the tops off the two heads of garlic, drizzle with a little oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool slightly, then squeeze the roasted garlic cloves out and mash them into a paste.
    2. Reduce oven temperature to 375°F. In a bowl, mix the mashed roasted garlic with softened cream cheese, minced shallot, sour cream, salt, pepper, garlic powder, and onion powder. Spread this mixture evenly into the bottom of a small baking dish.
    3. In a small bowl, combine the minced fresh garlic with melted butter. Drizzle this over the cream cheese mixture.
    4. Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.
    5. Place the dish in the oven and bake at 375°F for 25–30 minutes, or until the cheese is golden and bubbly.
    6. Remove from the oven and top with sliced green onions. Serve hot with toasted bread, chips, crackers, or fresh veggies. Enjoy!
