Ingredients

For the Chicken Souvlaki:

  • 2 lbs boneless skinless chicken breasts, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 tbsp plain Greek yogurt
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Optional: 1 tsp red wine vinegar

For the Tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 large cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt to taste
  • Optional: 1 tsp chopped fresh dill

For the Fries:

  • 2–3 russet potatoes, cut into thin fries
  • Avocado oil
  • Salt + pepper
  • Optional: paprika or garlic powder

For Serving:

  • Warm pita, flatbread, or wrap
  • Chopped romaine
  • Sliced tomatoes
  • Thinly sliced red onion
  • Crumbled feta
  • Deli paper or parchment for wrapping

Instructions

    1. Whisk together olive oil, lemon juice, yogurt, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 1 hour in the fridge (up to 8 hours max).
    2. In a bowl, combine yogurt, grated cucumber, garlic, olive oil, lemon juice, and salt. Stir in dill if using. Chill until ready to use.
    3. Thread marinated chicken onto rotisserie skewers. Preheat your Weber to medium-high (about 400°F). Attach skewers and cook, rotating evenly, for 12–15 minutes or until golden and 165°F inside. Let rest, then slice or serve cubed (as is).
    4. Toss potatoes in avocado oil. Heat a cast iron pan directly on the grill over medium-high heat. Cook fries in batches, turning occasionally until golden and crisp (about 15–20 minutes total).
    5. Spread tzatziki on warm pita or wrap. Layer on the tomatoes, fries, souvlaki chicken, romaine, red onion, feta cheese.
      Serve as is or wrapped in parchment. Enjoy!
