Lemon Arugula Malfadine Pasta

Ingredients
- 1/2 lb of Mafaldine
- 2 tbsps olive oil
- 2-3 cloves garlic, minced
- 1/2 cup heavy cream
- 1 cup ricotta
- 1/2 cup grated parmesan (and additional to serve)
- Zest of 1/2 lemon
- Juice of one lemon
- 2 cups arugula
- 1/4 tsp red chili flakes
- 1 tsp salt
- 1/2 tsp black pepper
- Basil for garnish
Instructions
- Cook pasta following cooking instructions to al dente. Reserve 1/2 cup cooking water.
- Over medium heat, add olive oil and garlic to a pan. Cook until fragrant. Add heavy cream, parmesan and ricotta. Whisk until slightly thickened.
- Whisk in lemon juice, chili flakes, salt and pepper to taste. Toss in cooked pasta to coat. Gradually pour in cooking water and stir until preferred consistency.
- Mix in arugula and serve immediately.
- Top with basil, lemon zest, parmesan and enjoy!
