Ingredients
- 16-20 little potatoes
- 6 pieces of bacon, cooked and roughly chopped
- 1 cup shredded yellow cheddar
- 2 green onions, sliced
- 3/4 cup sour cream
- 1 tbsp chopped chives
- 1 tsp garlic powder
- 1 tsp onion powder
- Extra-virgin olive oil
- Salt and pepper
Instructions
- Boil potatoes for 10-15 minutes, until fork tender.
- Preheat oven to 450°F. Line a baking sheet with parchment paper and evenly spread out potatoes. Use a jar or glass to smash each potato. Drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes.
