Loaded Smashed Potatoes

Ingredients

  • 16-20 little potatoes
  • 6 pieces of bacon, cooked and roughly chopped
  • 1 cup shredded yellow cheddar
  • 2 green onions, sliced
  • 3/4 cup sour cream
  • 1 tbsp chopped chives
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Extra-virgin olive oil
  • Salt and pepper

Instructions

  1. Boil potatoes for 10-15 minutes, until fork tender.
  2. Preheat oven to 450°F. Line a baking sheet with parchment paper and evenly spread out potatoes. Use a jar or glass to smash each potato. Drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes.
  3. Remove from the oven add chopped bacon and cheddar cheese. Return to oven to bake for additional 5-8 minutes, until cheese is bubbly.
  4. Meanwhile, in a small bowl mix together sour cream, chive, garlic powder, onion powder, and salt and pepper.
  5. Top off potatoes with green onion. Plate and serve with sour cream dip. Enjoy!
