If you're craving fresh, tangy pickles without the wait, these same-day pickles are the answer! Perfect for adding a crisp, flavorful bite to your meals, this quick pickle recipe comes together in just a few hours.

Ingredients

  • 1 large pickling cucumber (or regular cuke)
  • 1-2 cloves garlic
  • 2 tsps kosher salt
  • 1 tsp granulated white sugar
  • ~1/2 tsp peppercorns
  • 3 sprigs fresh dill
  • Jalapeño, sliced into large sections (optional)
  • 1-1 1/2 cups white distilled vinegar (enough to fill jar halfway after cucumbers are in)
  • 1 1/2 cups filtered water

Instructions

  1. In a small pot, start boiling water.
  2. Slice cucumber into 1/4 inch slices or spears and place into clean 32oz ball jar. Add sugar, salt, peppercorns, garlic cloves, dill, and jalapeño to jar.
  3. Pour in vinegar to fill jar to the halfway point. Top off with boiling water, leaving 1/2 inch of room at the top. Carefully, shake jar and leave on counter to cool to room temperature prior to storing in the fridge. You can enjoy as soon as they cool down to room temp or chilled overnight. They will last one week in the fridge. Enjoy!
