I adore nothing more than getting to go strawberry picking with my boys and come home to make the yummiest treats and dishes with the loads of strawberries we got! Ingredients

  • Dough
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 5 cups flour, divided
  • 2 cups warm whole milk, 110-115°F
  • 1 pack active dry yeast
  • 2 tsps salt
  • 1 tsp baking powder
  • Filling
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup strawberry jam (from jam recipe)
  • Jam
  • 16 oz strawberries, diced (fresh or frozen)
  • 1 cup sugar
  • Icing/topping
  • 8 oz cream cheese, room temperature
  • 1 cup powdered sugar
  • 2 tbsps unsalted butter, melted
  • 2 tbsps heavy cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, finely diced

Instructions

  1. Start by greasing 2 9x13 baking dishes. In a large bowl, whisk together milk, melted butter and sugar. Sprinkle yeast on top, mix and allow to sit until frothy. Add 4 cups of flour and use a wooden spoon to mix into milk mixture until combined. Cover bowl with clean dish towel and allow to rise for 1 hour.
  2. Meanwhile, in a medium sauce pan prepare the jam by tossing strawberries in sugar. Place over medium heat, stirring occasionally. Once it begins to boil, reduce to a simmer for 25 minutes, stirring occasionally to prevent burning. Remove from heat. Pour into jar or glass measuring cup, uncovered, and refrigerate until needed (yields ~1 1/4 cups of jam).
  3. Preheat oven to 350°F. Once dough is doubled in size, add salt, baking powder, and ~3/4 cup to dough and mix. Flour clean working surface, pour out dough. Knead dough lightly while adding flour as needed. Once dough is no longer sticky, roll out dough into large rectangle that is about a 1/2 inch thick.
  4. In a small bowl, mix together softened butter and sugar. Spread across surface of dough. Dollop roughly 3/4 cups of jam across surface and spread evenly.
  5. Carefully start to roll dough over itself to create sticky bun spiral form. Use a sharp knife to cut 14-16 buns (cut in half and repeat to get even slices). Place sticky buns snug in prepared baking dishes. Cover with plastic wrap or clean dish towel and allow to sit for 30 minutes.
  6. Remove dish towel and bake for 25-30 minutes or until golden. Prepare the icing by using a hand mixer to whip until smooth all ingredients except strawberries.
  7. Remove sticky buns from oven. Scoop icing on top, spread out evenly and scatter diced strawberries on top. Enjoy!
