My friends having been RAVING about this whipped feta! The key is to use a greek yogurt with high fat content. I recommend Cabot’s 10% fat greek yogurt. This dip/spread is so easy to throw together ahead of time. Before you need it, just take it out of the fridge prior to when you need it so it can come to room temperature. This whipped feta pairs well with sliced, toasted baguette as well!

Whipped Feta & Smashed Potatoes

Ingredients
Whipped Feta
- 8 oz Feta cheese
- 1 cup full fat greek yogurt
- Juice of 1 lemon
- 1/8 cup fresh dill
- salt and pepper
- 2-3 tbsps olive oil
- Dash of garlic powder
Smashed Potatoes
- 2-3 lbs little potatoes, roasted or boiled until just about fork tender
- 2 tbsps olive oil
- Salt and pepper
Instructions
To prepare Whipped Feta
- Combined all ingredients in a food processor or small blender. Gradually add olive oil and blend until texture is smooth.
- Garnish with additional fresh dill and a drizzle of olive oil.
For the Smashed Potatoes
- Preheat oven 425°F. Using a cup, smash potatoes almost flat. Transfer to a baking sheet lined with foil.
- Drizzle with olive oil, salt, and pepper. Bake for 15 minutes, flip all potatoes, then bake for additional 10-15 minutes or until golden and crispy. Serve with flaky salt and enjoy!
